Pumpkin Spice Muffins - Low Sugar, High Fiber!

There's Baby Spice, Sporty Spice, Scary Spice, Ginger Spice, Posh Spice and the seasonal member, Pumpkin Spice.

Wait, is that wrong? Oh well.

These pumpkin spice muffins are a simple, basic recipe that is perfect for fall! They are:


  • simple
  • high fiber
  • low fat/calorie (under 100 calories each)
  • moist and tasty

Ingredients:

  • 1 1/2 cups pumpkin puree
  • 2 eggs
  • 1 pumpkin greek yogurt (I used Chobani)
  • 1/3 cup almond milk
  • 1/4  cup Vitafiber IMO powder 
  • 1/2 cup erythritol sweetener (1:1 to sugar)
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice

Directions:

Topped with Reddi-Whip and Cinnamon "Sugar"
  1. Preheat oven to 350 degrees Fahrenheit. Line/spray a muffin tin. 
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and spices. 
  3. In a separate bowl, whisk together the pumpkin, eggs, yogurt, milk, fiber powder and sweeteners. 
  4. Fold the wet ingredients into the dry until combined. (Beating the batter incorporates air and causes muffins to sink!) 
  5. Bake the muffins for 25-30 minutes until a toothpick comes out clean. 
Enjoy!
Makes 12 muffins. 
Macros per muffin: 98 calories 24.5c/1.3f/3.7p (2.3g sugar and 5.9g fiber!)

*Note: I sprinkled a blend of erythritol and cinnamon on half for a "cinnamon sugar" topping and loved it! Feel free to try adding in mini chocolate chips or nuts for some extra fun!
